Abstract

Terahertz (THz) scanners are taking the stage as a novel tool for the quality inspection of food products. The nondestructive and contact-free nature of the THz technology could offer substantial advantages over conventional X-ray or ultrasonic testing. This article provides an introduction to THz systems and shows how the food industry could benefit from this innovative technology.
