Abstract
Sustainable biomaterials are increasingly recognized for their potential to transform bakery product packaging by reducing environmental impact. Bio-based materials such as biodegradable polymers (PLA, PHA, PBAT, starch, etc.) are gaining prominence as alternatives to traditional petroleum-based plastics, offering enhanced barrier properties that extend the shelf life of bakery products by protecting them from moisture, oxygen, and other external influences. The incorporation of nanotechnology into these materials further enhances their barrier properties and introduces antimicrobial effects, helping to preserve product freshness. Additionally, the use of fermented biomaterials enriched with polyunsaturated fatty acids (PUFA) not only boosts the nutritional value of bakery products but also positively influences their rheological properties and sensory qualities. As consumer demand for eco-friendly packaging grows, regulatory frameworks and industry standards increasingly promote the adoption of these materials, ensuring they meet the demands of consumers while maintaining product integrity. This chapter delves into the advancements and applications of these biomaterials, highlighting their significance in promoting sustainability within the bakery industry and setting the stage for future innovations.
