Abstract

The theory of the widely used Peleg's rehydration kinetics was defined according to a pseudo-second-order kinetic expression. The moisture sorption capacity, initial moisture uptake rate, equilibrium moisture concentration and the kinetic rate constant were defined according to a pseudo-second-order kinetic expression. The kinetic constant and the initial reaction rate of Peleg's rehydration kinetic model are redefined according to a pseudo-second-order kinetic expression.
