Abstract
3D food printing is an emerging technology that enables the revolutionization of food production by creating customized, functional, and sustainable food supply chains and products. As the demand continues to grow for customized food design, personalized nutrition, and alternative protein sources, 3D printing offers a unique opportunity to fabricate complex structures with controlled shapes, textures, and compositions. At the heart of this technology lies materials science, which governs the formulation, flow, transformation, and final properties of food products throughout the printing and postprocessing stages. This chapter introduces an overview of the materials science principles underpinning successful 3D food printing. It starts by reviewing the current 3D printing technologies and the role of rheology in determining printability, including parameters such as shear-thinning, yield stress, and viscoelasticity. The discussion goes on to consider the thermal properties, mechanical behavior, and structural fidelity, which affect shape retention, stackability, and texture. Various materials have been implemented, such as carbohydrates, proteins, fats and emulsions, hydrocolloids, and bioinks, emphasizing their individual characteristics and synergistic effects when blended. Beyond traditional formulations, the chapter also extends into the use of structured emulsions, Pickering, and encapsulated functional ingredients like vitamins, probiotics, gel-based systems, 4D printing technologies and antioxidants, where stimuli-responsive materials open a growing demand in personalized food engineering.
